This delicious guacamole is creamier and fluffier than most versions, making it a terrific sauce for grilled or roasted salmon, chicken breasts, or cauliflower or tofu steaks. But you can also use it as a dip for veggies or to add an intriguing touch to Mexican favorites.
- 2 ripe avocados
- 2/3 cup loosely packed fresh cilantro leaves
- 2 cloves garlic chopped
- 3 green onions chopped
- 3 tablespoons lime juice
- 1 jalapeño pepper chopped
- 1/4 teaspoon fine sea salt
Combine avocados, cilantro, lime juice, green onions, garlic, jalapeño and salt in a food processor and process until fairly smooth, about 1 minute, scraping down sides of the food processor as needed. With the motor running, pour in 1/2 cup cold water. Guacamole should be fluffy and pourable; add more water 1 tablespoon at a time if needed.
Per serving: about 1/4 cup, 90 calories (70 from fat), 7g total fat, 1g saturated fat, 0mg cholesterol, 80mg sodium, 6g carbohydrates (4g dietary fiber, 0g sugar), 2g protein.
