Onion Dip

Here's a new take on an old favorite for this year's picnics. Silky soft tofu is the perfect back-drop for pungent onion and garlic in this not-out-of-the-box onion dip.

Ingredients

    1 cupsoft tofu
    1 tablespoonextra-virgin olive oil
    1 smallonion, chopped
    3 clovesgarlic, smashed and peeled
    1 tablespoonred wine vinegar
    1 tablespoonchopped fresh parsley
    3/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Line a colander with several layers of paper towel.


Place tofu in a colander and allow to drain 5 to 10 minutes to remove excess water.


Heat oil in a medium skillet over medium heat.


Add onion and cook, stirring 8 to 10 minutes, or until golden.


Add garlic and cook, stirring, 3 minutes or until garlic just begins to brown. Remove from heat.


Place sautéed onions and garlic in food processor and process until almost smooth.


Add drained tofu and process until smooth.


Add vinegar, parsley, salt, and pepper and process 2 to 3 seconds or until just blended.
