Orange Chicken Skewers with Sesame Honey Mustard Dipping Sauce

Soaking the wooden skewers in water for 30 minutes beforehand ensures that they'll hold up to the heat of the grill without burning.

Ingredients
- 4 boneless, skinless chicken breasts, cut into strips
- 1/2 teaspoon fine sea salt
- 1 cup orange marmalade
- Juice and zest of 2 lemons
- 1 cup low-sodium chicken broth
- 1/2 cup honey
- 1/2 cup mustard
- 1/2 cup mayonnaise
- 2 tablespoons toasted sesame seeds
- 1/2 teaspoon ground black pepper
Method
Season chicken all over with salt and pepper.
Put marmalade, lemon juice and zest, and broth into a wide, shallow dish and whisk together to make a marinade.
Add chicken, cover, and refrigerate for at least 1 hour.
Meanwhile, put honey, mustard, mayonnaise, and sesame seeds into a small bowl and stir to combine.
Cover dipping sauce and refrigerate until ready to use.
Prepare a grill for medium heat cooking.
Drain chicken from the marinade and thread onto skewers to form each kabob. (If using wooden skewers, soak in water for 30 minutes before assembling).
Grill until cooked through, about 2 minutes per side. Serve with dipping sauce on the side.
