Orange-Dijon Vinaigrette
Makes about 3/4 cup

Try spooning this vinaigrette over roasted asparagus or broccoli or tossing it with bitter greens like radicchio and arugula for a salad.

Ingredients
- 3 tablespoons orange juice
- 1 small shallot, finely chopped
- 2 tablespoons white wine or champagne vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- 1/3 cup safflower oil
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Method
In a bowl, whisk together the orange juice, shallots, vinegar, mustard, honey, salt and pepper.
Gradually whisk in oil until well blended. Adjust seasoning with more salt and pepper to taste.
