Orange-Glazed Wild Alaska Salmon with Mango Relish

A bowl of couscous or jasmine rice is a great accompaniment for this dish since it will help to soak up the orange glaze and juices from the mango relish.

Ingredients

    Mango Relish
    2 tablespoonschopped red bell pepper
    1 tablespoonchopped red onion
    1 tablespoonfinely chopped fresh flat-leaf parsley
    1/2 tablespoonfinely chopped garlic
    1 teaspoonlime zest
    1 teaspoonlime juice
    1 teaspooncanola oil
    1/2 smallmango, diced
    Orange-Glazed Salmon
    1/2 cuporange juice
    2 tablespoonssugar
    2 tablespoonschopped mango
    2 tablespoonschopped red onion
    1 tablespoonchopped red bell pepper
    1/2 teaspoonchopped jalapeño pepper
    4 (6-ounce)salmon fillets, skin removed

Method

For the mango relish, put bell peppers, onions, parsley, garlic, zest, juice, oil, and mango into a bowl and toss to combine. Cover and refrigerate.


Preheat the oven to 350°F.


In a sauce pot, combine orange juice, sugar, mango, onions, bell peppers, and jalapeño and bring to a boil.


Reduce heat and simmer for 10 minutes.


Strain and discard the solids.


Set aside and reserve the glaze.


Arrange fillets on a baking sheet and brush with half of the glaze.


Bake salmon for about 15 minutes, or until fillets reach desired doneness.


Remove salmon from the oven and brush with the remaining glaze.


Top each fillet with mango relish and serve.
