Oven Crispy Fish

This crunchy, gluten-free fish recipe is a tasty, homemade alternative to frozen fish sticks. Make a double batch to freeze and have on hand for quick weeknight dinners.

Ingredients
- 1 1/2 cup corn flakes, crushed
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon paprika
- 1/4 teaspoon ground ginger
- 4 (6.0-ounce) white fish fillets
- Olive or canola oil cooking spray
Method
Preheat the oven to 375°F.
Combine corn flakes, salt, paprika and ginger in a wide, shallow bowl or pie plate.
Press fish into corn flake mixture, turning to cover all sides completely.
Arrange fish pieces on a parchment-lined or oil-sprayed baking sheet at least 2 inches apart.
Spray fillets all over with cooking spray.
Bake for 8 to 10 minutes, or until top begins to brown, then turn and bake an additional 5 to 7 minutes, or until fish is cooked through.
Transfer to plates and serve.
If you wish, prepare ahead by freezing individually cooked and cooled pieces on a sheet pan until solid. Then transfer to a freezer storage container to keep on hand for a quick, heat and serve dinner.
