Yogurt with live cultures and natural peanut butter form the protein base of this creamy breakfast smoothie. Sweetened with dates and gently spiced with cardamom, it also includes flaxseed oil, which provides beneficial omega-3 fatty acids.
- 2 cups low-fat (1%) milk
- 3/4 cup nonfat plain yogurt
- 2 tablespoons creamy peanut butter
- 6 dates pitted and chopped
- 1 tablespoon rose water (optional)
- 2 teaspoons flaxseed oil
- 1/4 teaspoon ground cardamom
Combine milk, yogurt, peanut butter, dates, rose water, flaxseed oil and cardamom in a blender and blend until smooth. It’s fine if small pieces of dates are remaining; they make a wonderful treat at the bottom of the glass. Pour into 2 tall glasses.
Per serving: 340 calories (140 from fat), 15g total fat, 2.5g saturated fat, 10mg cholesterol, 180mg sodium, 42g carbohydrates (3g dietary fiber, 32g sugar), 12g protein.
