Pear Pudding

Any pear variety is delicious in this light dessert. Add shredded coconut for a bit of texture, if you prefer.

Ingredients
  • 5 Bartlett, D' Anjou, Bosc or Comice pears, peeled, cored and sliced
  • 3 cups milk
  • 1/2 cup plus 1 tablespoon uncooked cream of rice or cream of wheat
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon finely chopped fresh ginger (or 1/8 teaspoon ground ginger)
  • 1/3 cup shredded unsweetened coconut (optional)
  • 1/2 cup pure maple syrup

Method

Preheat the oven to 350°F.

Transfer pears to a 2-quart baking dish; set aside.

Heat milk in a small pot until almost at a simmer.

Slowly add cream of rice or wheat, whisking as you add.

Add salt, ginger and coconut and simmer on low heat for about 2 minutes.

Stir in maple syrup and pour mixture over pears.

Bake for 20 minutes, or until pears are tender.
