Pecan Crispies

Make a small indentation in the center of each cookie and fill with a small dollop of unsweetened jam or jelly, if you like.

Ingredients
- 1 1/2 cup brown rice flour
- 2 cups oat flour
- 1/2 teaspoon fine sea salt
- 1 1/2 cup chopped pecans
- 1/4 cup plus 2 tablespoons canola oil
- 1/2 cup rice syrup or maple syrup
- 1/3 cup plus 2 tablespoons apple juice
- 1 teaspoon pure vanilla extract, optional; omit if using maple syrup
Method
Preheat the oven to 350°F.
Mix flours, salt and pecans together in a bowl; set aside.
Mix oil, syrup, apple juice and vanilla together in a separate bowl, then add to flour mixture and combine to form a very thick dough.
Form dough into 2 disks, cover and refrigerate for 2 hours.
Form 1 disk of dough into 12 balls. Arrange on a parchment-paper-lined baking sheet and flatten with the bottom of a glass or the palm of your hand.
Repeat with remaining disk.
Bake for 20 minutes, rotating baking sheets halfway through, or until firm but not browned.
Set aside to let cool completely.
