Pecan Crispies

Ingredients

    1 1/2 cupsbrown rice flour
    2 cupsoat flour
    1/2 teaspoonfine sea salt
    1 1/2 cupschopped pecans
    1/4 cupplus 2 tablespoons canola oil
    1/2 cuprice syrup or maple syrup
    1/3 cupplus 2 tablespoons apple juice
    1 teaspoonpure vanilla extract, optional; omit if using maple syrup

Method

Preheat the oven to 350°F.


Mix flours, salt and pecans together in a bowl; set aside.


Mix oil, syrup, apple juice and vanilla together in a separate bowl, then add to flour mixture and combine to form a very thick dough.


Form dough into 2 disks, cover and refrigerate for 2 hours.


Form 1 disk of dough into 12 balls. Arrange on a parchment-paper-lined baking sheet and flatten with the bottom of a glass or the palm of your hand.


Repeat with remaining disk.


Bake for 20 minutes, rotating baking sheets halfway through, or until firm but not browned.


Set aside to let cool completely.
