Penne with Blue Cheese, Herbs and Walnuts

Bleu d'Auvergne, a French blue cheese made from cow's milk, gives this side-dish its rich, creamy flavor. Serve it with grilled chicken or shrimp for a tasty summer dinner.

Ingredients

    1/4 poundpenne rigate pasta
    1 clovegarlic, very finely minced
    2 tablespoonsextra-virgin olive oil
    Juice of 1/2 lemon
    1/4 cupcoarsely chopped walnuts
    4 ouncesBleu d'Auvergne cheese, coarsely crumbled
    1 cupfresh herb salad mix
    1/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Place garlic, olive oil, lemon juice, walnuts, cheese and herb salad mix in a large serving bowl or deep platter.


Bring a large pot of salted water to a boil over high heat.


Add the pasta and cook according to the package directions. Drain and immediately toss with ingredients in the bowl.


Season with salt and pepper.
