Penne with Blue Cheese, Herbs and Walnuts

Bleu d'Auvergne, a French blue cheese made from cow's milk, gives this side-dish its rich, creamy flavor. Serve it with grilled chicken or shrimp for a tasty summer dinner.
Ingredients
- 1/4 pound penne rigate pasta
- 1 clove garlic, very finely minced
- 2 tablespoons extra-virgin olive oil
- Juice of 1/2 lemon
- 1/4 cup coarsely chopped walnuts
- 4 ounces Bleu d'Auvergne cheese, coarsely crumbled
- 1 cup fresh herb salad mix
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
Method
Place garlic, olive oil, lemon juice, walnuts, cheese and herb salad mix in a large serving bowl or deep platter.
Bring a large pot of salted water to a boil over high heat.
Add the pasta and cook according to the package directions. Drain and immediately toss with ingredients in the bowl.
Season with salt and pepper.
