Peppery Brunch Potatoes

Serve these peppery potatoes for brunch or as a side dish along with your favorite egg dish. They're a quick and easy addition to any meal.
Ingredients
  • 6 yellow new potatoes halved
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
Method

Place potatoes in a medium pot filled with salted water. Cover and bring to a boil over medium-high heat. Reduce heat and simmer 8 to 10 minutes, or until potatoes are fork-tender.

Drain potatoes and place in a bowl. Drizzle with oil and season liberally with salt and pepper. Serve immediately or cover with foil to keep warm.
