Peruvian Ceviche

Serve this refreshing citrus-marinated fish with corn on the cob and sweet potato slices.
Ingredients
  • 1 pound fresh grouper, black or striped sea bass, halibut or red snapper fillet
  • 1/2 cup lemon juice (3 lemons)
  • 1/2 cup lime juice (3 to 4 limes)
  • 1 small red onion, thinly sliced
  • 2 tablespoons chopped fresh cilantro
  • 1 jalapeño pepper, seeded and diced
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper

Method

In a large nonreactive bowl, combine the fish, lemon juice, lime juice, onion, cilantro, jalapeño, salt, and pepper and toss gently to combine. 

Refrigerate at least 4 hours and no more than 6, stirring occasionally to distribute ingredients.
