Pimenton Cornmeal Crusted Catfish

This simple catfish recipe is perfect for a quick dinner. It's easy to double or even triple to feed the whole family. Serve with steamed green beans, or a salad for a complete meal.

Ingredients
- 1/4 cup yellow cornmeal
- 2 teaspoons Spanish paprika or pimentón
- 1/2 teaspoon dried thyme
- 1/4 teaspoon fine sea salt
- 2 (8.0-ounce) catfish fillets, rinsed and patted dry
- 1 tablespoon canola oil
- 1/8 teaspoon ground black pepper
Method
On a flat plate, mix together cornmeal, paprika, thyme, salt and pepper.
Dredge fish in cornmeal mixture, turning to coat both sides.
In a large nonstick or well-seasoned cast iron skillet, heat oil over medium heat.
Place catfish fillets in the skillet.
Cook about 5 minutes each side, until crust is browned and fish flakes easily.
