Pineapple Noodle Kugel

Pineapple puts a spin on traditional kugel in this cornflake-topped sweet dessert made with egg noodles. Scoop servings into bowls and serve warm, topped with whipped cream.

  • 1/3 cup seedless raisins
  • 6 eggs
  • 1/4 cup honey
  • 2 tablespoons sugar
  • 1 cup canned crushed pineapple drained well
  • 8 tablespoons (1 stick) unsalted butter melted, divided
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • Canola spray oil as needed
  • 8 ounces dried egg noodles cooked according to package directions and drained
  • 1 cup natural corn flakes, crushed crushed
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
Method

Preheat the oven to 325°F.

Soak raisins in hot water for 5 minutes and then drain. In a mixing bowl, combine eggs, honey, sugar, pineapple, soaked raisins, 4 tablespoons of the butter, salt and pepper; set aside. Spray the bottom of a 9x13-inch baking dish with spray oil. Fill with cooked noodles, then pour egg mixture over the noodles.

In a small bowl, combine corn flakes, cinnamon, brown sugar and remaining 4 tablespoons butter and toss to combine. Sprinkle over noodles and bake, uncovered, for 45 minutes, or until a toothpick inserted in the center comes out clean.
