Purple Blueberry Rice

Delicious served hot or cold, this striking breakfast porridge will shake up your morning routine. If you can’t find purple rice, use another nutritious grain, such as quinoa, brown rice or steel-cut oats.

Ingredients

    2 cupspurple or black rice
    2 cupsblueberries, fresh or frozen
    1 teaspoonpure vanilla extract
    1 largemango, cubed

Method

Combine rice, blueberries and 4 1/2 cups water in a medium pot over high heat. 


Cover and bring to a boil. Reduce to a simmer. 


Cook until rice is tender, about 35 to 40 minutes, stirring frequently. 


Stir in vanilla extract and mango and serve.
