Quick Pizza Margherita

Use this same method to make any style pizza you like. Simply top with items that suit your taste like pepperoni, diced ham, sliced peppers and onions or crumbled feta cheese.
Ingredients
  • 1 round pita bread
  • Extra-virgin olive oil
  • 1 very ripe tomato, sliced
  • 1 ounce fresh goat cheese, cut into rounds
  • 1 teaspoon prepared basil pesto
  • Parmigiano Reggiano cheese (optional)
Method

Position a rack in center of the oven. Place a baking sheet on the rack. Preheat the oven to 400°F. 

Brush both sides of pita with oil. 

Cover one side with sliced tomatoes. Transfer to hot baking sheet. 

Bake 5 minutes, then add goat cheese and dot with pesto. 

Sprinkle with Parmigiano Reggiano, if desired. 

Bake another 5 minutes or until cheese melts and crust is crispy.
