Quinoa with Oyster Mushrooms and Adzuki Beans

This easy dish makes a great side or even a meatless entree. Look for dried oyster mushrooms in the produce department and make sure to remove their tough stems before using.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1/2 cup thinly sliced carrots
- 3 green onions, chopped
- 1/4 cup dried oyster mushrooms, crushed slightly, stems removed
- 2 cups low-sodium vegetable broth
- 2 cups cooked adzuki beans, drained and rinsed
- 1 cup uncooked quinoa, rinsed
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon ground black pepper
Method
Heat oil in a large skillet over medium high heat.
Add carrots, onions, and mushrooms and cook, stirring occasionally, for 3 minutes.
Add broth, beans, quinoa, salt and pepper and bring to a boil.
Reduce heat to low and simmer for 15 to 20 minutes, or until all liquid is absorbed.
Fluff with a fork and serve.
