Quinoa with Oyster Mushrooms and Adzuki Beans

This easy dish makes a great side or even a meatless entree. Look for dried oyster mushrooms in the produce department and make sure to remove their tough stems before using.

Ingredients

    1 tablespoonextra-virgin olive oil
    1/2 cupthinly sliced carrots
    3green onions, chopped
    1/4 cupdried oyster mushrooms, crushed slightly, stems removed
    2 cupslow-sodium vegetable broth
    2 cupscooked adzuki beans, drained and rinsed
    1 cupuncooked quinoa, rinsed
    1/4 teaspoonfine sea salt
    1/8 teaspoonground black pepper

Method

Heat oil in a large skillet over medium high heat. 


Add carrots, onions, and mushrooms and cook, stirring occasionally, for 3 minutes. 


Add broth, beans, quinoa, salt and pepper and bring to a boil. 


Reduce heat to low and simmer for 15 to 20 minutes, or until all liquid is absorbed. 


Fluff with a fork and serve.
