Roasted Red Pepper and Cottage Cheese Dip

Serve in a Pumpernickel Bread Bowl, if you like, with raw veggies on the side for dipping.

Ingredients

    1/2 cupchopped fresh parsley
    1/4 cuplemon juice
    1/4 cupsesame oil
    2 tablespoonsplain yogurt
    2 teaspoonsshoyu (soy sauce)
    2roasted red bell peppers, finely chopped
    1 container (16-ounce)cottage cheese
    1 clovegarlic, finely chopped

Method

In a medium bowl, combine the cottage cheese, yogurt, sesame oil, lemon juice, garlic, peppers, and parsley. 


Serve immediately or cover and refrigerate before serving.
