Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper.
Combine carrots, paprika, ginger, cumin, salt, garlic powder, black pepper and oil in a large bowl and toss to coat.
Transfer carrots to baking sheet in a single layer.
Roast, tossing halfway through, until just tender, 30 to 35 minutes.
Remove carrots from oven and transfer to a large bowl.
Add lemon juice, honey and and parsley and toss well before serving.
