Rum-Spiked Citrus Sea Bass

Ingredients

    3 tablespoonsextra-virgin olive oil
    2 clovesgarlic, finely chopped
    2 tablespoonswhite rum or dry white wine
    1lemon, zest and juice of
    1 tablespoonorange juice
    1/2 teaspoonfine sea salt
    4 (8-ounce)sea bass fillets (about 1-inch thick)
    1lime, zest and juice of
    1small orange, zest of
    1/4 teaspoonground black pepper

Method

In a small bowl, stir together olive oil, garlic, rum, citrus zests, juice, salt and pepper. 


Rub fish with mixture and chill for 30 minutes.


Preheat grill. 


Grill fish over medium heat, turning once, about 5 minutes per side, until just opaque in the center. Serve immediately.
