Rum-Spiked Citrus Sea Bass

Bring island flavor to the dinner table! Serve this light and easy dish with black beans and rice, sweet plantains or sweet potato chips and your own Caribbean punch.

Ingredients
- 3 tablespoons extra-virgin olive oil
- 2 cloves garlic, finely chopped
- 2 tablespoons white rum or dry white wine
- 1 lemon, zest and juice of
- 1 tablespoon orange juice
- 1/2 teaspoon fine sea salt
- 4 (8.0-ounce) sea bass fillets (about 1-inch thick)
- 1 lime, zest and juice of
- 1 small orange, zest of
- 1/4 teaspoon ground black pepper
Method
In a small bowl, stir together olive oil, garlic, rum, citrus zests, juice, salt and pepper.
Rub fish with mixture and chill for 30 minutes.
Preheat grill.
Grill fish over medium heat, turning once, about 5 minutes per side, until just opaque in the center. Serve immediately.
