Sage and Avocado Salad

If you're tired of the same old green salad, try serving this avocado and tomato alternative. Use your favorite salad greens (mixed baby greens, arugula or romaine all work well) to make this salad fit your taste.
Ingredients
  • 1 avocado, pitted and cut into 1-inch chunks
  • 1 large tomato, pitted and cut into 1-inch chunks
  • 1 tablespoon finely chopped fresh sage
  • 1 tablespoon apple cider vinegar
  • 3 cups salad greens
  • 2 tablespoons sunflower seeds

Method

Combine avocado, tomato, sage, and vinegar in a large bowl and toss gently. 

Arrange salad greens on 3 plates. 

Divide the avocado mixture between the plates, arranging it in the middle of each bed of greens. 

Sprinkle with sunflower seeds and serve.
