Scallops and Snow Peas

Scallops are always impressive even though they're simple to prepare. Make sure not to overcook the scallops in this quick dish since they're at their best when still tender and juicy.

Ingredients
- 3 tablespoons canola oil
- 2 cloves garlic, crushed
- 1/3 pound scallops, sliced into 1/4-inch thick rounds
- 3 cups snow peas
- 1 tablespoon arrowroot powder
- 1/2 teaspoon white pepper
- 1 tablespoon light white miso
Method
Heat oil in a wok or large skillet over medium high heat.
Add garlic and stir-fry until it begins to color.
Add scallops and stir-fry 1 to 2 minutes.
Using a slotted spoon, transfer scallops and garlic to a plate and set aside.
Add snow peas to wok and stir-fry for 2 to 3 minutes.
Mix arrowroot and 1/4 cup water in a small bowl to make a slurry, then add to wok along with pepper and miso and stir-fry an additional 2 minutes.
Return scallops and garlic to wok and cook just until heated through.
Transfer to a platter and serve immediately.
