Shrimp and Pineapple Kabobs

Serve these sweet and savory kabobs over steamed brown rice. Add a green salad with tomatoes and feta cheese for a perfect summer meal.

Ingredients
- 1 pound large shrimp, peeled and deveined with tails on
- 1 (15.0-ounce) can drained (or 1 cup fresh) pineapple chunks
- 1 red bell pepper, cut into 1-inch squares
- 1 yellow or white onion, cut into 1-inch squares
- 4 (16-inch) bamboo skewers, soaked in water 1/2 hour
- 1/4 cup balsamic vinaigrette
Method
Lightly oil a grill grate and preheat to medium-high.
Alternate shrimp, pineapple and vegetables onto soaked skewers.
Place skewers on hot grill and cook 3 to 5 minutes, turning once and basting with vinaigrette.
