Shrimp Dip
Makes about 2 cups
Time 1 hr 30 min
Serve this creamy dip with thin slices of whole grain bread, crackers and plenty of vegetables for dipping. It's an excellent alternative to classic shrimp cocktail.
Special Diets:
Ingredients
- 1/2 pound frozen peeled and deveined shrimp
- 1 clove garlic
- 1/2 teaspoon cayenne pepper, divided
- 8 ounces Neufchâtel cheese, softened
- 4 ounces sour cream
- 1 teaspoon Dijon mustard
- 1 dash hot sauce, optional
- 1 teaspoon white pepper
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon fine sea salt
- 1/2 cup chopped green onions
Method
Boil shrimp with whole garlic and 1/4 teaspoon cayenne until shrimp is cooked through, about 4 minutes.
Drain and set aside until cool enough to handle, then remove tails and coarsely chop shrimp and garlic.
Combine remaining 1/4 teaspoon cayenne, cheese, sour cream, salt, white pepper, Worcestershire sauce, mustard and hot sauce in a bowl and stir until smooth.
Stir in shrimp, garlic and green onions. Cover and refrigerate for at least 1 hour before serving.
