Ingredients
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon sugar
  • 8 tablespoons (1 stick) unsalted butter, chilled and cut into small pieces
Method

Place flour, salt and sugar in the bowl of a food processor and pulse briefly to combine, or combine by hand in a large bowl.

Add butter and pulse until mixture resembles coarse meal, about 10 seconds in the food processor. Alternately, cut butter in by hand with two table knives.

Add 2 to 3 tablespoons ice water and pulse, or mix by hand with a fork, just until dough begins to come together.

Turn dough out onto a cutting board or smooth surface and form into a flattened disc.

Cover with plastic wrap and refrigerate for several hours or overnight.

Roll out dough on a lightly floured surface when ready to use.
