Simple Tofu Scramble

This simple dish makes for a terrific, nutritious breakfast or light lunch. Serve with whole wheat toast and fresh fruit on the side, or tuck into tortillas for breakfast tacos.

Ingredients
- 1 teaspoon canola oil
- 1 yellow onion, finely chopped
- 2 celery stalks, finely chopped
- Turmeric, to taste
- 1 (16.0-ounce) package firm or extra-firm tofu
- Shoyu, to taste
Method
Heat oil in a large skillet over medium-high heat.
Add onions and celery and cook until softened, 4 to 5 minutes.
Stir in turmeric, then crumble in tofu.
Reduce heat to medium and cook, covered, for about 10 minutes, stirring occasionally.
Season with shoyu and serve.
