Simplified Summer Berry Parfaits

Take advantage of summer's bounty of berries! Use your region's best ripe berries, or even peaches, nectarines, plums or cherries, in this festive dessert.

Ingredients
  • 2 cups heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup lemon curd
  • 2 pints fresh berries
  • 1/4 cup crushed pistachios (optional)

Method

Whip heavy cream until it begins to thicken. Add sugar and vanilla and whip until soft peaks form. Fold in lemon curd and refrigerate until ready to use.

Just before serving, alternate layers of fresh berries with lemon cream in glasses or bowls. Sprinkle with crushed pistachios, if desired.
