These quesadillas are far from traditional, but they don't skimp on flavor. Bitter greens like arugula are a worthy match for rich and creamy melted Gruyère.
Method
Warm a heavy skillet over medium-high heat.
Place one tortilla in the skillet and top with half of the ham, cheese, arugula and tomatoes. Press another tortilla on top.
Cook 2 to 3 minutes, then carefully flip the quesadilla to brown the other side for another minute or two.
Remove to plate and repeat with remaining ham, cheese, arugula, tomatoes and tortillas.
Cut quesadillas into wedges and serve.
