Smoked Salmon Reuben Wraps

These wraps are a fun spin on the deli classic and make an easy lunch or handy tailgating treat. Add a big green salad for a complete meal.

Ingredients

    4 largewhole wheat tortillas, warmed until pliable
    6 tablespoonsprepared Thousand Island dressing
    4 slicesSwiss cheese, cut in half diagonally
    1/2 poundsliced cold-smoked salmon
    1/2 cupsauerkraut, well drained

Method

Lay tortillas on a work surface and spread each with 1 1/2 tablespoons dressing, leaving a 1/2-inch border around edges.


 Layer each with 2 pieces cheese, one-fourth of the salmon and 2 tablespoons sauerkraut. 


Roll up tightly and halve.
