Spanish Chickpeas and Chorizo

This Spanish-influenced dish is equally good using canned chickpeas or ones you've cooked yourself. Serve as an appetizer with crusty bread slices on the side.

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 small yellow onion, thinly sliced
- 1/2 pound spicy Spanish chorizo, sliced
- 1 (15.0-ounce) can no-salt-added garbanzo beans (also called chickpeas), drained and rinsed
- 1/8 teaspoon fine sea salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons finely chopped fresh flat-leaf parsley
Method
Heat oil in a large skillet.
Add onion and cook, stirring frequently, until golden brown, about 5 minutes.
Add chorizo and cook briefly, stirring.
Add chickpeas, and cook another 5 minutes to heat through. Season with pepper and salt and sprinkle with parsley.
