Spicy Thai Tofu with Rice Noodles

Ingredients

    1/2 pounduncooked rice noodles
    3/4 cupprepared peanut sauce
    4green onions, thinly sliced
    2 tablespoonssesame seeds
    1/2 teaspooncrushed red chile flakes
    1 package (8-ounce)baked Thai-style tofu, cubed
    1/4 cupchopped cilantro or parsley
    Lime wedges

Method

Cook noodles according to package directions.


Rinse until cool, then drain and place in a large mixing bowl.


Add peanut sauce, green onions, sesame seeds, chile flakes, tofu and cilantro.


Toss well, then transfer to bowls and serve with lime wedges on the side.
