Spicy Thai Tofu with Rice Noodles

This recipe comes together quickly, with an exotic touch that adds a little spice to your summer evenings.

Ingredients
- 1/2 pound uncooked rice noodles
- 3/4 cup prepared peanut sauce
- 4 green onions, thinly sliced
- 2 tablespoons sesame seeds
- 1/2 teaspoon crushed red chile flakes
- 1 (8.0-ounce) package baked Thai-style tofu, cubed
- 1/4 cup chopped cilantro or parsley
- Lime wedges
Method
Cook noodles according to package directions.
Rinse until cool, then drain and place in a large mixing bowl.
Add peanut sauce, green onions, sesame seeds, chile flakes, tofu and cilantro.
Toss well, then transfer to bowls and serve with lime wedges on the side.
