Watercress lends a subtle peppery flavor to this easy green salad that’s tossed with a unique dressing made from almond butter. Both the mixture of greens and the dressing can be prepared ahead of time, but wait to combine them until right before serving.

Ingredients

    1/4 cupcreamy almond butter
    2 tablespoonsfresh lime juice
    1 tablespoonhoney
    1/2shallot, finely chopped
    1/2 teaspooncoarse sea salt
    1/4 teaspoonground black pepper
    3 cupspacked baby spinach (about 3 ounces)
    1 bunchwatercress, trimmed, leaves torn into bite-size pieces
    1/4 cupchopped fresh chives
    1 largecucumber

Method

In a small bowl, whisk together almond butter, lime juice, honey, 1 tablespoon warm water, shallot, salt and pepper until evenly blended.


In a large bowl, combine spinach, watercress and chives.


Cut cucumber lengthwise in half, scoop out seeds and thinly slice.


Add cucumber to bowl with greens and drizzle with honey-almond mixture.


Gently toss until evenly coated.
