Strawberry and Blueberry Watermelon Mint Salad

4
The addition of crisp, cool watermelon is perfect with this simple strawberry and blueberry fruit salad. Recipe adapted from our friends at Driscoll's.
Special Diets:
Ingredients
  • 3 tablespoons sugar
  • 3 tablespoons water
  • 1 teaspoon grated lime zest
  • 3 cups cubed watermelon
  • 1 cup large mint leaves, thinly sliced
  • 1 (16.0-ounce) package Driscoll's Strawberries, hulled and cut in half
  • 1 (6.0-ounce) package Driscoll's Blueberries
Method

Combine sugar, water and lime zest in a small saucepan. Heat over medium-high heat until it comes to a boil. Remove from heat and allow to cool as you prepare the rest of the ingredients.

In a large serving bowl, combine cut strawberries and watermelon along with the blueberries, mint and sugar mixture. Toss salad gently until evenly mixed and serve.
