Strawberry-Balsamic Dressing

This flavorful fat-free salad dressing is great over spinach and arugula, and it's also delicious as a dip for pear or apple wedges or raw vegetables.
Ingredients
  • 2/3 cup sliced strawberries
  • 1/4 cup balsamic vinegar
  • 1/2 shallot chopped
  • 2 teaspoons fresh thyme leaves
  • 1 1/4 teaspoon Dijon mustard
  • 1/4 teaspoon ground black pepper
Method

In a blender, combine strawberries, vinegar, shallot, thyme, mustard, pepper and 1/4 cup water. Blend until very smooth.
