Strawberry Bulgur Picnic Salad with Pistachios and Feta

Ideal for a summer picnic, this light grain salad gets its bright flavor from fresh strawberries, cucumbers and basil. Try adding fresh mint instead of basil (or in addition!), if you like.

Ingredients

    1 cupbulgur wheat
    1/2 poundstrawberries, hulled and sliced
    3green onions, thinly sliced
    1English cucumber, chopped
    1/2 cupcrumbled feta cheese
    1/2 cupshelled, roasted and salted pistachios
    2 tablespoonschopped fresh basil
    3 tablespoonslemon juice
    1 tablespoonwhole grain mustard
    1/4 teaspoonfine sea salt

Method

Put bulgur in a large heatproof bowl.


Pour 1 1/2 cups boiling water over the top, cover and let sit until tender, about 30 minutes.


Drain well and return to bowl to cool.


Add strawberries, green onions, cucumber, cheese, pistachios and basil to the bowl and toss gently to combine.


In a small bowl, whisk together lemon juice, mustard and salt


Drizzle over salad and toss to combine. Serve immediately, or refrigerate in an airtight container until ready to serve or up to 3 days.
