Stuffed Mushroom Caps

Stuffed mushrooms are an easy hors d'oeuvre for parties. Assemble them ahead of time and simply bake them just before the guests arrive.

Ingredients
- 16 large cremini mushrooms
- 2 tablespoons extra-virgin olive oil
- 1 small onion, finely chopped
- 1 cup whole wheat bread crumbs
- 1/4 cup finely chopped almonds
- 1/4 cup mirin
- 2 tablespoons tamari
- 1 lemon, juice of
Method
Preheat oven to 350°F.
Remove stems from mushrooms.
Dice stems and set aside.
Combine mirin, tamari and lemon juice in a small bowl.
Heat oil in a skillet; cook onions and mushrooms stems until very soft.
Add bread crumbs, almonds and half of mirin mixture to onion mixture; cook over medium heat until liquid is absorbed by the bread crumbs.
Place mushroom caps, round-side down, in a baking dish.
Pour remaining half of mirin mixture over mushroom caps, fill with bread crumb mixture, and bake until browned, about 20 minutes.
