Summer Sausage Sauté

Combine your favorite sausage with a sauté of fresh onions, bell peppers and zucchini, then serve over polenta for a quick and satisfying meal that looks as good as it tastes. For this dish, use packaged, pre-cooked sausage and a packaged roll of polenta.

Ingredients

    2 tablespoonsextra-virgin olive oil
    1/2 cupchopped red onion
    1 largezucchini, chopped
    1 largered bell pepper, seeded and sliced
    1 package (12-ounce)cooked pork or turkey sausage, any flavor, sliced
    1 package (18-ounce)premade polenta, cut into 1/2-inch slices

Method

Heat oil in a large skillet over medium heat. Add onions, zucchini and red peppers and cook for 5 minutes.


Add sausage and continue to cook for an additional 5 to 7 minutes, stirring often, until sausage is browned.


Heat polenta according to package directions, sautéing, baking, or broiling it, as desired.


To serve, spoon sausage and cooked veggies over polenta and serve.
