Sweet and Tangy Pineapple-Cucumber Salad

Serve this salad as a side dish or condiment with roasted pork or soy-marinated grilled fish or tofu. It is also delicious rolled into lettuce wraps.
  • 3 cups chopped fresh pineapple
  • 2 cucumbers peeled, seeded and sliced
  • 2 green onions thinly sliced
  • 1/4 cup roughly chopped fresh mint
  • 1/4 cup lime juice

In a large bowl, combine pineapple, cucumbers, green onions, mint and lime juice. Gently toss to combine.
