- 3 cups chopped fresh pineapple
- 2 cucumbers peeled, seeded and sliced
- 2 green onions thinly sliced
- 1/4 cup roughly chopped fresh mint
- 1/4 cup lime juice
In a large bowl, combine pineapple, cucumbers, green onions, mint and lime juice. Gently toss to combine.
