Sweet Corn and Black Bean Salad

Simple to prepare, colorful and flavorful, this salad combines sweet corn, tender black beans, crisp red peppers and zesty cilantro in a simple lime and rice vinegar dressing.
Ingredients
  • 1 (15.25-ounce) can whole kernel sweet corn, drained
  • 1/2 medium red onion, finely chopped
  • 2 tablespoons seasoned rice vinegar
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lime juice
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 (13.4-ounce) packages no-salt-added black beans, rinsed and drained
  • 1 red bell pepper, cored, seeded and chopped
  • 1/2 cup fresh cilantro leaves, finely chopped
  • 1 clove garlic, minced
  • 1 medium avocado, diced (optional)

Method

In a large bowl, whisk together vinegar, lime juice, garlic, salt and pepper. Slowly whisk in olive oil.

Add beans, corn, onion, bell pepper, avocado (if using) and cilantro and toss until just incorporated. Cover and chill for about 2 hours.
