Tomato and Chicken Sausage Pasta Sauce

Chicken-cilantro sausage and fresh cilantro combine to add a savory and tangy punch to this simple sauce. Use it on top of pasta, rice or couscous.

Ingredients
- 1 pound chicken-cilantro sausage, removed from casing
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped
- 1 (15.0-ounce) can low-sodium chicken broth
- 1 (14.5-ounce) can tomato sauce
- 1 bunch fresh cilantro, chopped
- Ground black pepper, to taste
Method
Sauté chicken sausage and onion in olive oil, stirring to break up sausage, until browned and almost cooked through.
Add chicken broth and simmer for 15 minutes.
Add tomato sauce; stir and cover and simmer for 5 to 10 minutes. Turn off heat.
Add cilantro and black pepper and let sit for 5 minutes. Serve over pasta, rice or couscous.
