Tuna and Piquillo Pepper Tapas

Serve this Spanish tapas dish as an appetizer alongside olives and roasted peppers, with glasses of cold, sparkling wine for sipping.

Ingredients
- 1 (5.0-ounce) can oil-packed tuna, drained
- 1 tablespoon sherry vinegar
- 1 tablespoon capers
- 1/2 small shallot, finely chopped
- 1 tablespoon chopped piquillo peppers
- Sliced baguette, toasted, if desired
- 1/4 teaspoon ground black pepper
Method
In a small bowl, mix together tuna (leave some large chunks), vinegar, capers, onion and peppers.
Season and let marinate for at least 2 hours or up to overnight.
Serve atop sliced baguette.
