In this delicious riff on the classic BLT, turkey bacon lightens up the sandwich, while fresh spinach leaves stand in for the lettuce. But there’s no substitute for juicy, vine-ripened tomatoes!
- 1 teaspoon extra-virgin olive oil
- 3 slices turkey bacon
- 2 teaspoons unsalted butter
- 2 slices whole grain bread lightly toasted
- 4 spinach leaves
- 2 slices tomato
Heat oil in a large skillet over medium-high heat. Add bacon and cook, turning once, until crisp, about 6 minutes. Remove from the skillet and arrange on a paper-towel-lined plate. Spread butter on one side of bread slices. Layer bacon, spinach and tomato slices on buttered side of one bread slice. Top with remaining bread, buttered-side down, and serve.
Per serving: 1 sandwich, 470 calories (290 from fat), 32g total fat, 10g saturated fat, 95mg cholesterol, 1260mg sodium, 26g carbohydrates (5g dietary fiber, 6g sugar), 20g protein.
