Turkey Burgers with Roasted Pepper and Avocado Salsa

These turkey burgers are so hearty and full of flavor that they hardly need a bun. Instead, serve them solo on a bed of grilled veggies for a memorable outdoor summer dinner.

Ingredients

    <b>Salsa</b>
    1avocado, finely chopped
    8 ouncesroasted red peppers, finely chopped
    1 tablespoonlime juice
    2 tablespoonsthinly sliced fresh basil
    1/4 teaspoonor more finely chopped habanero pepper
    1/4 teaspoonfine sea salt, or to taste
    <b>Turkey Burgers</b>
    1 poundground turkey, (a mix of light and dark meat is best)
    2eggs, lightly beaten
    1/2 cupplus 2 tablespoons dried bread crumbs
    2 tablespoonsfinely chopped fresh basil
    1/2 teaspoonground black pepper

Method

For the salsa, combine avocado, red peppers, lime juice, basil, habanero peppers and salt into a bowl and gently stir. Set aside.


For the burgers, prepare a grill for medium-high heat cooking. 


Combine turkey, eggs, bread crumbs, basil and pepper into a large bowl and mix together well. 


Shape turkey mixture into 4 patties, then grill, flipping once, until just cooked through, about 6 minutes per side. 


Serve turkey burgers topped with salsa.
