In a medium bowl thoroughly combine bread crumbs, cheese, ham, mustard, parsley, onions, salt and pepper. Add turkey and gently bring all the ingredients together with your hands, being careful not to overwork the meat. With dampened hands, form the meat into 6 patties. Place patties on a lined baking sheet, cover loosely with plastic wrap and refrigerate for 1 hour.
Prepare the grill or preheat the broiler. Cook burgers, turning them carefully with a spatula, for 6 minutes per side, or until no longer pink inside. Transfer to plates and serve.
