Turkey Fresco Wraps

Assemble the wraps ahead of time, wrap tightly in wax paper and pack in lunch boxes for your family. Use whole wheat tortillas to make these wraps even more nutritious.

Ingredients
- 2 (12-inch) flour tortillas
- 3 ounces tomato, garden vegetable or onion cream cheese
- 1 cup baby spinach
- 1/4 pound thinly sliced smoked turkey
- 2 ounces sliced Jarlsberg cheese
- 1 (6.0-ounce) jar artichoke hearts, drained and quartered
- 1/4 cup thinly sliced red onion
- 6 pitted Kalamata olives, roughly chopped
Method
Place one tortilla on a work surface and spread with half of the cream cheese, leaving a 2-inch border around the edge.
Top with half of the spinach, turkey, cheese, artichoke hearts, onions and olives.
Fold up the sides and bottom of the tortilla, then gently roll it up.
Seal the tortilla with a dab of cream cheese, if you like, then cut in half crosswise.
Repeat process with remaining ingredients.
