Although this sandwich is especially good with Grafton Reserve Cheddar, make it with any sharp cheddar cheese that you have on hand.
- 2 slices multigrain bread
- 1 teaspoon whole grain mustard
- 1/2 McIntosh apple cored and very thinly sliced
- 2 ounces Grafton Reserve Cheddar grated
- 1 tablespoon butter softened
Spread butter on the outside of both slices of bread. Spread the opposite side of one slice of bread with mustard and arrange apple slices on top. Add cheese and top with second slice of bread. Heat a skillet over medium heat. Add sandwich and cook, turning once, until golden brown and cheese is melted. Transfer to a plate and serve.
Per serving: 620 calories (300 from fat), 34g total fat, 19g saturated fat, 90mg cholesterol, 690mg sodium, 57g carbohydrates (6g dietary fiber, 22g sugar), 23g protein.
