Vietnamese Dipping Sauce

Vietnamese dipping sauces like this one are perfect to serve alongside spring or summer rolls. Whisk a bit of the sauce with olive oil for a light dressing to toss with shredded carrots or cabbage, too.

Ingredients
- 1 Thai chile or jalapeño, finely chopped
- 1/4 cup lime juice
- 1 tablespoon plus 1 teaspoon sugar
- 3 tablespoons fish sauce
- 2 tablespoons shredded carrot
- 2 cloves garlic, finely chopped
Method
In a small bowl, combine chile and lime juice.
Add sugar, fish sauce, carrot and garlic and stir until sugar dissolves.
Cover and refrigerate for 1 hour, or up to 5 days before serving.
Serve at room temperature as a dipping sauce.
