Walnut Coffee Cake

Ingredients

    3/4 cupplain unsweetened soy milk
    3 tablespoonsroasted grain coffee substitute
    1/4 cupcanola oil
    4 ouncesunsweetened applesauce
    1 cupsugar
    2eggs
    2 teaspoonsvanilla extract
    1/2 cupplus 3 tablespoons walnut pieces, ground
    1 1/2 cupsall-purpose flour
    3/4 cupwhole wheat pastry flour
    1 tablespoonbaking powder
    1/2 teaspoonfine sea salt
    1 teaspoonpowdered sugar, (optional)

Method

Preheat the oven to 350°F. 


Lightly oil or spray a 9-inch springform pan or 9-inch round cake pan; set aside. 


Lightly heat soy milk in a small pot, then add coffee substitute; set aside.


In a large mixing bowl, beat oil with applesauce and sugar until combined then add eggs and beat well. 


Add vanilla and soy milk-coffee mixture. 


Set aside 2 tablespoons of the ground walnuts for garnish. 


Mix remaining walnuts, flours, baking powder and salt together in a bowl, then add to applesauce mixture and beat well. 


Pour batter into prepared pan and bake for 30 minutes, or until done. 


Cool on a rack. Garnish cake with reserved walnuts and a dusting of powdered sugar, if desired.
