Walnut Coffee Cake

Eat a slice of this coffee cake with a mug of hot chamomile or earl grey tea for a relaxing break in a busy day.

Ingredients
- 3/4 cup plain unsweetened soy milk
- 3 tablespoons roasted grain coffee substitute
- 1/4 cup canola oil
- 4 ounces unsweetened applesauce
- 1 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1/2 cup plus 3 tablespoons walnut pieces, ground
- 1 1/2 cup all-purpose flour
- 3/4 cup whole wheat pastry flour
- 1 tablespoon baking powder
- 1/2 teaspoon fine sea salt
- 1 teaspoon powdered sugar, (optional)
Method
Preheat the oven to 350°F.
Lightly oil or spray a 9-inch springform pan or 9-inch round cake pan; set aside.
Lightly heat soy milk in a small pot, then add coffee substitute; set aside.
In a large mixing bowl, beat oil with applesauce and sugar until combined then add eggs and beat well.
Add vanilla and soy milk-coffee mixture.
Set aside 2 tablespoons of the ground walnuts for garnish.
Mix remaining walnuts, flours, baking powder and salt together in a bowl, then add to applesauce mixture and beat well.
Pour batter into prepared pan and bake for 30 minutes, or until done.
Cool on a rack. Garnish cake with reserved walnuts and a dusting of powdered sugar, if desired.
