Warm Honey Mustard Potato Salad

Instead of cutting the potatoes into cubes, try using very small, whole new potatoes for a different look. Garnish this savory salad with chopped fresh dill, if desired.
Ingredients
  • 2 pounds new potatoes, cut into 3/4-inch cubes
  • 2 celery stalks, chopped
  • 15 cornichon pickles, sliced
  • 1 red bell pepper, chopped
  • 2 tablespoons prepared honey mustard dressing

Method

Steam or boil potatoes until just tender but still firm. Drain well.

Meanwhile, put celery, pickles, peppers and dressing into a large bowl and toss well.

Add hot potatoes to bowl and toss just enough to blend everything together. Serve immediately.
