Whole Wheat Bean and Cheddar Quesadillas

Canned black and pinto beans work great in this recipe. Just make sure to rinse and drain them well to remove any excess salt.

Ingredients
- 4 (8-inch) whole wheat tortillas
- 1/2 cup cooked black beans, drained and rinsed
- 1/2 cup cooked pinto beans, drained and rinsed
- 1 1/2 cup shredded Cheddar cheese
- 1/4 cup fire-roasted salsa
- 1/4 cup chopped fresh cilantro
Method
Warm a heavy skillet over medium-high heat.
Place one tortilla in the skillet and top with half of the black beans, pinto beans, cheese, salsa and cilantro.
Press another tortilla on top.
Cook until cheese is melted and tortillas are browned, flipping halfway through, about 3 minutes per side.
Remove to plate and repeat with remaining tortillas, black beans, pinto beans, cheese, salsa, and cilantro.
Cut quesadillas into wedges and serve.
